Croque Star

"Brunch is probably the most honest meal of the week. It's where you just let it out. It's food, booze, group therapy."

On any given Sunday at Sinema in Nashville, chef Dale Levitski is more than happy to help diners work through their issues, mainly by lovingly swaddling them in soft bread, salty ham, tart apples, sweet shallots, an oozy egg and a crisp cheese halo—chased by a beer, just in case that combo seemed too austere. It all adds up to the croque-madame on which the former Top Chef finalist built his career (see the recipe) and his reputation as one of the most inventive brunch chefs in the country.

Dale Levitski Wins Iron Fork 2015

Iron Fork 2015 was held last night at the Musicians Hall of Fame at Municipal Auditorium before a packed house.

Contesting the trophy this year were returning champ Hal Holden-Bache (Lockeland Table), Crystal De Luna-Bogan (Grilled Cheeserie), Robert Grace (Kayne Prime) and Dale Levitski (Sinema).

The culinary competition's secret ingredient this year? Yogurt.

Veggie Panna Cotta: So Weird It Works (Bon Appetit)

If you saw the beet panna cotta with Meyer lemon mousse recipe a reader requested in our most recent edition of RSVP, you may have done a double-take. Beet panna cotta might sound strange, but it makes sense: Sweet vegetables lend themselves to desserts, and panna cotta can serve as a blank canvas for pretty much any flavor—savory included. Here are 6 veggie custards you can find across the country.

Sinema's New 'Seven Delicious Sins' Menu Series Begins With a Stoner-Paradise Dessert Called 'Rocky Roadkill'

"Death by chocolate" is a phrase so cliché that I have come to find that any dessert being referred to as such is usually quite boring and not even dangerous, let alone deadly. But this morning, when I received a press release about Sinema's new Seven Delicious Sins menu series, which kicks off tonight with a "death-by-chocolate inspired dessert," I started to think perhaps there are still some instances in which the phrase can apply. Because LOOK AT THIS DESSERT:
